It has been over a month or so, since Coronavirus has changed the way we live, work, and eat. As social distancing and staying indoors has become a new normal, weekend brunches and evening drinks have given way to home cooking and whipping up easy, delicious recipes.

Having to cook every single meal comes with the challenge of finding creative recipes and new dishes that call for same pantry staples, which have been stocked up as essentials. Moreover, we are constantly seeking to innovate and replicate our love for different cuisines by rationing resources and using the available ingredients wisely.

Lemon Rice

For days you want to eat something nutritious and delicious, there is nothing better than this lemon rice! The tangy flavor of lemon coupled with spices gives this meal a refreshing twist.

Pantry staples you require for this meal: Chana dal, urad dal, lemon, coconut oil, rice, mustard seeds, curry leaves, ginger, chopped green-chilli, turmeric, red chilli powder, and salt.

Do you use a specific recipe for this dish? This one from India Today,  it is super easy and turned out to be delicious and flavorful.

What alternative healthy ingredients do you put into the meal to switch it up? You can use brown rice instead of white rice to make this dish healthier.

What is the most important pantry staple you were sure to stock up on during this time? Milk, chicken, eggs, Soya Nuggets, Lentils, and spices.

Banana Bread

Banana bread is a great dessert to calm your sweet craving and is one of the desserts to that is appetizing and filling at the same time! It serves as the perfect comfort food for me during this quarantine.

Do you use a specific recipe for this dish? Tried this one from Veg Recipes of India

What alternative healthy ingredients do you put into the meal to switch it up? Chia seeds, walnuts, and almonds to give a crunch, Jaggery powder or Honey to avoid sugar, Soy or almond flour instead of wheat. All these alternatives can do wonders and make the dessert a healthy guilt-free dish.

What is the most important pantry staple you were sure to stock up on during this time? Rice, chicken, bananas, Oatmeal, Noodles and Pasta, potato, garlic, and eggs off-course!

Omelette/ Egg Curry

Eggs are one of the most versatile item, that can be eaten for any meals during the day and the best part being that they are packed with nutrients and protein, that has helped me stay fit and healthy during the work from home situation due to this pandemic.

Do you use a specific recipe for this dish? Yes, I very recently came across Egg curry recipe by Chef Saransh Goila and this is by far the best recipe I have ever tried.

What alternative healthy ingredients do you put into the meal to switch it up?  You could add in more veggies option like mushroom, corn etc.
