Since dinner at a fancy restaurant or ordering-in is off the table for many of us, it’s time to get creative and surprise your dad with hearty home-cooked meals to make him feel special! Here are four recipe ideas to get you started –

Breakfast: Shakshuka

On this special occasion, skip the regular omelette or scrambled eggs and indulge your father with a skillet of shakshuka, a dish that is popular in many Mediterranean cultures. All you need to do is sauté onion, garlic and cumin in a little oil. Add chopped tomatoes, salt, a little water to soften the mixture and let it cook. And therefore, this year, on the occasion of the 71st Republic day in India, let me introduce you to a national health awareness campaign “Right to Protein”.

Republic Day is one of the most important days for India as the constitution came into existence this day.

It is also the day when government make all the necessary amendments and comes up with new rights and policies to improve the well-being of the nation.

So, what can be a better day to tell you about ‘Protein’ – which is so important yet overlooked, with 73% of diets in urban India being protein deficient.

You must be wondering what is “Right To Protein”? It is an initiative where a nation-wide health advocacy campaign aims at giving individuals their right to consume protein.

This campaign has launched an online general ‘protein calculator’, which will help Indians across different age-groups, to track down their daily protein intake and make necessary amendments in their everyday diet.

This “Protein-O-Meter” will ask you basic questions regarding your body profile, type of lifestyle and kind of meals consumed during the entire day.

It will then calculate the average proteins required against the amount consumed an any given day, specifically for you.

Not only this, the website will also provide you the necessary information on protein-rich foods, healthy habits, and tips.

As much as I like to cook, I always focus on what ingredients are being used in my recipes and do those ingredients fulfill the necessary protein requirements.

I also make sure that my meals include protein, as I have a teenage son and it is very important for his overall growth.

Paneer being my favourite ingredient which is very rich in protein, I am making a Paneer Tikka Masala today, which is one of his favourites too.

So without wasting any time, let’s dive into the recipe of Paneer Tikka Masala, so that even you can make it for your meals and include protein in your diet.

Paneer Tikka Masala is one of the famous North Indian Paneer dishes that is perfect for a simple lunch or dinner at home or a big occasion.

One more advantage of making this dish at home is that you can also make some Paneer Tikka for snacks or sides.

It is a win-win situation. Make this restaurant-style Paneer Tikka Masala at home with this easy recipe. I can assure you it is finger licking good and all your guests and family members are going to love it.

What is Paneer Tikka Masala?

Paneer Tikka Masala is a marinated, grilled cottage cheese (paneer) and vegetable skewer dunked in a rich onion tomato gravy.

Marinate chunks of paneer and vegetable (onion and bell peppers) in spiced hung curd and grill it on a tawa, grill pan, barbecue or in an oven.

To make restaurant-style paneer tikka masala at home, use Kashmiri red chilli powder, which renders a beautiful colour to paneer tikka without adding any artificial colours.

Paneer tikka masala gravy is a rich, spicy gravy, unlike paneer butter masala. It has a sweet yet spicy flavour, which is perfect to be served with naan or lachha paratha.

The gravy is made with onions and tomatoes simmered with whole spices to get the best flavour.

Can you freeze Paneer Tikka Masala?

Yes, you can freeze the marinated paneer tikka masala. It is recommended that you freeze the paneer tikka and the gravy separately.

Marinate the paneer and vegetables and marinate them before grilling.

Put them in a Ziploc or freezer safe bags and freeze for up to 3-4 days.

Freeze the gravy separately in freezer-safe bag or container for 2-3 months.

Once you are ready to serve, just thaw the paneer and gravy at room temperature for 3-4 hours.

Grill the paneer and vegetables, warm the gravy and then mix the two.

Tips to restaurant-style Paneer Tikka Masala

Use ripe and red tomatoes to get the sweetness and avoid the sour unripe tomatoes.

Make fresh paneer at home, if possible. Use fresh hung curd to marinate.

Adding Kashmiri Red Chilli Powder in place of regular chilli powder gives a nice colour to the gravy without making it too spicy.

Paneer Tikka Masala Recipe Step By Step

For Paneer Tikka:

Mix all the ingredients for the marinade in a big bowl and whisk properly.

Now add paneer cubes, onions and capsicum to the marinate and mix gently to cover all the chunks properly. Cover it and refrigerate for at least 2 hours.

Thread the paneer, onion and capsicum on skewers and grill on a grill pan or tandoor or barbeque till done and slightly blackened. Apply little oil while grilling.

Once done, keep aside.

For the gravy:

Heat oil and ghee in a pan. When the oil is hot, add all the whole spices – cloves, black peppercorn, black cardamom and cinnamon, and fry for a few seconds.

Add grated onion to the spice mix and fry till slightly browned.

Now add ginger garlic paste and fry till onions are nicely browned.

Once the onions are golden brown, add grated tomato and tomato puree and simmer for 2-3 minutes to let the spices infuse their flavor.

Add the leftover marinade from the paneer tikka, red chilli powder, turmeric powder and salt to taste and cook for a few minutes.

Add a half cup of water to get the right consistency and add the grilled vegetables. Cook for 3-4 minutes till oil starts separating.

Now add honey, lemon juice, fresh cream and kasuri methi and cook for a minute.

Currently there are 195 countries in the world & guess which one is celebrating its 71st Republic day today?
It’s a no brain-er, but still we’re laying it out for you guys: It is none other than the largest democracy in the world & our motherland- India!
Yes, we’re celebrating our 71st Republic day as a Republic Nation.
Across our country, there are a lot of reservations about eating meat & non-vegetarian food in general. As a result, most of our diets lack sufficient quantity of protein. This Republic Day, let’s try to improve our overall well-being by exerting our Right to Protein. This mostly involves adding protein elements in our diet, irrespective of animal or plant based proteins. This doesn’t just stop at you as it is our duty to influence those around us so that everyone can lead a healthier life style.

Right To Protein!

It is not unknown to the masses that our country has a huge population & a majority of the population does not have the privilege of consuming well balanced meals throughout the day. Hence, the awareness for this campaign is crucial to our development as a nation.
Ever wondered why majority of foreign athletes pack more power? It is mostly because of their protein rich diets! A protein rich diet not only boosts metabolism, but also helps in building muscle etc. With that been said, we take the pledge of making better & healthier diet choices & increasing the quantity of protein in our diet (Not that we consume any less).
We also consider It our responsibility to spread the knowledge & influence others. You should do it too!

We are Bengalis from the city of joy, Kolkata & majority of our protein intake comes from fishes & other meats.

However, since we pledged to make better diet choices, we’ll talk about a personal favorite of ours: soya bean. These remarkable nuggets pack a lot of protein & the reason why we chose a vegetarian item is to include those who do not prefer non-veg. Soya bean is a favorite back in our home town.
One of our favorite preparations is the Soya Chaap. It is insanely tasty & if prepared well, tastes as good as meat.

So let us show you how you can earn your right to protein !

Soya beans soaked for 4 hours and drained 1/2 cup

Refined flour 3/4 cup cup

Salt to taste

Wooden ice cream sticks as required

Yogurt 1/2 cup

Gram flour 2-3 tablespoons

Chaat masala 1/2 teaspoon

Turmeric powder 1/4 teaspoon

Red chilli powder 1/2 teaspoon

Garam masala powder 1/4 teaspoon

Ginger-garlic paste 1 teaspoon

Oil to deep fry

Refined flour slurry as required

Soya mince as required

Onion rings to serve

Lemon slices to serve

Fresh mint to garnish

Let us walk you through the course of preparation:
  • Blend soya beans with some water
  • Mix refined flour with soya paste & salt to a semi-stiff dough
  • Break the dough into balls & flatten them like a Roti
  • Cut into strips & wrap it around a wooden stick ( we use ice cream sticks as they look appealing) Voila, we made the chaaps
  • Heat water & blanch the strips (4-5 min). Then drain the water & keep them in some ice for the mixture to harden
  • Take curd in a bowl along with gram flour, turmeric, red chilli, garam masala powder, ginger & garlic paste & a little water. Mix well with a pinch of salt
  • Heat oil in a non-stick pan, Take the leftover refined flour in a bowl
  • Dip the chaaps in the curd mixture, coat it with the refined flour & fry till golden brown. If you like to add a bit of zing, add minced soya after the refined flour. This adds some crunch to the Soya Chaaps.
After this we generally use napkins to absorb the excess oil. Tastes best with some lemon juice freshly squeezed on top.
As mentioned before, majority of our diets are mostly protein deficient as we gorge on carbs. This just keeps us full for a longer period with little benefit. We hope you take the pledge along with us to fight the battle against malnutrition.
Coming down to the Right to Protein, which is a is a nation-wide public health initiative to increase general awareness about the importance of adequate and quality protein in everyday diet. It is an initiative to educate the people in India about the importance of protein for their general health, fitness and well being. The #RightToProtein campaign aspires to act as a catalyst in promoting consumption of different forms of proteins amongst Indians for better overall nutrition. Under this initiative, there is a protein calculator called the Protein-O-Meter, which calculates one’s daily protein requirement basis basic individual information such as body profile, type of lifestyle and meals consumed at different times during the day. Apart from information on one’s possible protein gap, the platform also provides information on protein-rich foods, healthy habits, tips and busting myths about protein.
This takes the Indian dietary preferences into consideration & across all age groups.
As they say, our body is made up of 75% of what we eat! A healthier diet leads to a better lifestyle & that directly translates into better fitness, working capability & longevity in general.

How Chicken Momos can be the Best Snack to Improve Protein Intake?

From steamed and fried momos to tandoori and afghani momos, to wheat and chilli momos, the versatile dumpling has become one of the most popular street foods of Delhi, so much so, that the earlier saying of “Dilli ki Chaat” has gradually evolved into “Dilli ke Momos“.

Fancy restaurants, student-friendly cafes and  street-side vendors, momos seem to everywhere. Being the typical Delhi-ite that I am, I can safely admit that I am, much like a lot of Dilli-walas,  addicted to momos. Piping hot, stuffed with juicy, meaty filling and served alongside a fiery red chutney, the aroma wafting all around a momo stall is enough to rev my appetite. Irresistible.

Considering that momos are now a part of my weekly diet, I cannot disregard the fact that it is tasty yet rich source of protein from whole food. It is known that, chicken is one of the best protein options, with very little fat and all essential amino acids. So, momos have trickled to my kitchen and I ended up making these beautiful rice chicken momos – rich in protein and perfect to meet your daily protein requirement. Fuss-free to make, these rice chicken momos become a meal, with the protein from chicken and the carbohydrates from basmati rice.

White Rice or Quinoa: Nutritionally Which one leads the board?

White rice has been one of the most commonly consumed grains over the years while, quinoa has emerged as a healthy alternative and gained attention only in the recent years.

Rice is basically a cereal grain. White rice has the husk, bran, and germ removed, which lowers its nutritional value. Quinoa, on the other hand, is the seed of the goosefoot plant and is high in nutrition. Having said that, quinoa is often referred to as a grain because of its similar nutritional and culinary properties as rice and other grains. In fact, it is a seed not only healthier than rice but also is native to South America which was first grown 5,000 years ago and belongs to same family as spinach and beets.

No wonder why quinoa has become one of the most consumed and sought-after health foods in the world, thanks to its high levels of minerals and fiber, and the fact that it is a complete protein, meaning it contains all the nine essential amino acids required to keep one healthy and nourished.

Though it’s undeniable that white rice has long made a delicious and affordable carbohydrate base for a wide variety of world cuisines, it doesn’t exactly have a stellar nutritional resume. In comparison, quinoa is rich in both fiber and protein, and contains much higher amounts of nutrients while allowing for a similar texture.

Both Rice and quinoa are used in similar ways, have their own nutritional benefits, and can often be used interchangeably in recipes. But when it comes to the healthiest option to turn to, it’s quinoa that takes the cake. Here are the 5 reasons why quinoa is more nutritious than, rice.

Quinoa is a complete protein

For such a tiny seed, quinoa has a lot of protein. One cup of cooked has almost 8 grams of protein content. It is one of the very few vegetarian sources of protein that is complete protein. This means it contains all the nine essential amino acids your body needs.

White rice, on the other hand, is an incomplete protein, a comfort food and a single cup of rice contains 2 times lesser amount of protein thank quinoa. And while rice has a place in the healthy diet, it’s definitely high in carbs.

Including protein in your daily diet has proved to have multiple benefits such as building bones, gain muscles, repairing tissue, and reduced food cravings.

Quinoa can keep you fuller for longer –

Quinoa is rich in fiber, one cup of it contains 5 grams of fiber which is significantly higher than rice. Fiber is an important nutrient because it reduces the risk of developing heart diseases and keeps you fuller for longer. It also helps you keeping your digestive system healthy and manages your weight, controls blood circulation, and sugar level.

While, rice has only 0.6 grams of fiber as the husk and bran is removed, it has very low level of which lowers the nutritional value in comparison to quinoa.

Quinoa is rich in magnesium –

Magnesium is important for more than 300 biochemical reactions in the body. It helps to maintain normal nerve and muscle function, supports a healthy immune system, keeps the heartbeat steady, and helps bones remain strong. It also helps adjust blood glucose levels. It aids in the production of energy and protein.

A cup of quinoa has 118 milligrams (mg) of magnesium, making it one of the best food sources of the mineral. In comparison, white rice has 19 mg which is why, it is suggested to include quinoa in you daily diet over white rice.

Quinoa contains healthy carbs –

Even though, quinoa and rice have similar amounts of carbohydrates – 39 g and 44 g per cup, respectively. The quality of carbs differs. There are two types of carbs available; ‘good’ or ‘bad’, that is related to where each food falls on the glycemic index, which in turn helps you understand the food effects on the blood glucose level.

Therefore, a food which is at the upper end of the GI, such as white rice, raises blood glucose levels higher than a food on the lower end of the GI. Low-GI foods are generally ones that contain protein and fiber, such as quinoa.

Quinoa and Rice both can enhance the nutrient profile of Gluten-Free diets –

Quinoa and rice both are naturally gluten free. But quinoa has an upper hand here, as it is a great source of nutrition for those with celiac diseases or gluten intolerance. Rice, on the other hand, is a bit less nutritionally rich than quinoa.

However, the nutrition content is similar only if cross-contamination doesn’t happen during processing. Also, if you’re trying to cut flour out of your diet, both are great choices to help you stay on track.

While white rice is devoid of nutritional value and will always take the back seat in the health department, both quinoa and brown rice are super nutritious options that are good sources of minerals and fiber, are naturally gluten-free, and aid in essential bodily functions like digestion and blood sugar

All in all, Quinoa tops the list of healthy food alternatives, as it is not a grain, contains no wheat, is high in protein, comparatively low on carb, and comes in handy. It also has a host of other vitamins and minerals to keep you feeling full and light throughout the day.

Best Protein Rich Foods You Should Eat Post Workout

When you work-out to keep your body fit, the other factor that needs attention is the right kind of nutrition. Most of us try to find shortcuts with a couple of supplements. But, the ideal way is to mainly consume nutritious whole foods, especially before and after workouts, because that’s when energy levels fluctuate the most. It is important to fuel our bodies with the right kind of food to support muscle recovery, strength & growth. Often, one finds it difficult to figure out the right kind of post workout diet that would replenish the body and provide us with added energy.

Why is it important to eat right post-workout?

While exercising, the muscles draw out the stored glucose, called glycogen for energy and helps the body support the workout activity. This makes the body slightly deprived of glycogen and in the process the proteins in muscles also break down.

By maintaining the right nutritional balance post workout, you can restore your energy levels, reduce fatigue and thus, help the body repair muscles, replenish glycogen and build strength for future workouts. Therefore, foods rich in proteins and carbohydrates should be consumed. Protein is one such nutrient which is considered as the building block of the body comprised of chains of smaller molecules of amino acid. Without enough protein intake, the muscles will not heal after workout, and their growth will be limited.

Hence, adding protein rich foods like eggs, cottage cheese, greek yoghurt, soya proteins, chicken, nuts would speed up the recovery process, maximize exercise benefits, and help maintain lean muscles:

Eggs: Eggs are the perfect post-workout food as they’re loaded with high amount of proteins and are a great source of many other nutrients, which help your body repair after an intense gym session. One egg has 6 grams of protein, or 15% of your daily recommended value. So, having hard-boiled eggs paired with a piece of fresh fruit will replenish your glycogen stores, which usually depletes after a tough workout.

Soya proteins: Soy proteins are a type of legume that are naturally high in protein, is cholesterol free and relatively low in saturated fat. Also, including soy products in your post workout meals is essential as they contain fiber, and heart-healthy omega-3s fatty acids that helps in recovery of the muscles & gives an energy boast. Therefore, it is suggested to include tofu, soya milk, soya nuts etc. in your post workout diet.

Chicken: Chicken is a lean source of protein which is packed with all the necessary amino acids and is perfect for muscle-building. Moreover, chicken is versatile and can be prepared in a variety of ways. But consuming excessive amount of animal-based protein should be avoided as it lacks in some amino acids whereas vegetables & other vegan products like pulse etc. are whole source of essential proteins & nutrients.

Nuts: Nuts are a very popular form of healthy snacking that’s easily available and can be enjoyed in various forms. A handful of nuts can provide you with enough proteins and help in maintaining the insulin levels during & post workouts. Therefore, it is suggested to add a handful of nuts & seeds such as almonds, walnuts, pumpkin seeds, sunflower seeds, cashews etc. in your workout diet. Even nut butters are a good alternative.

Greek Yogurt: Greek yogurts are more thick, creamy and delicious as compared to regular yogurt and has almost double the protein, less carbohydrates and half the sodium. You can add fruits like berries to your greek yogurt as it makes a perfect combination of carbohydrates & proteins. Carbohydrates in berries would help in fighting muscle soreness. On the other hand, protein is stored for a longer time and is beneficial to prevent muscle damage.

Cottage Cheese: Cottage cheese is an excellent source of casein, a protein just as effective at stimulating muscle growth as whey proteins. Due to high water content present in cottage cheese, it can help replenish fluids in your body after sweating it out in the gym. Although, casein is slower to digest than whey protein, it is more effective at preventing your muscles from breaking down after exercise.

Post-workout meals are very crucial for achieving workout goals. What you eat after your workout is just as important as what you eat before.
